Breakfast is my favorite. It’s like a giant welcome celebration for the upcoming day. My mom used to wake me up very softly, and immediately turn her back to my bed and squat down so that I could climb onto her back. She would then carry me into the dimly lit dining room and set me down in my seat, which already had my breakfast laid out for me to enjoy. My senior year of high school my mom made me start walking to the table though- she said that I was getting too heavy :)…I know what you’re thinking-spoiled rotten-my friends would have a field day whenever they would come over for a sleepover, but I think it was pretty special. She new that her attitude towards me upon my waking would set the tone for my entire day, so she chose to go the extra little mile and make my mornings easy and sweet. It was her way of honoring me before a day at school, and that’s what mothers are for, right?
Despite breakfast being my favorite meal, I sometimes get “chef block” when it comes to preparing a meal for Hattie, I avoid pre-packaged food of any sort, so making something from scratch every morning that doesn’t get boring for the both of us can be difficult at times. I threw together a few ingredients one morning, and my blueberry pancakes were born. They are a go-to at least once a week, and Hattie loves them, plus they are super easy to make. The blueberries make a nice little juicy syrup when they cook and pop, so she doesn’t even need a topping or a dipper to moisten them up. Try them out with your littles. I bet they will love you! (A piggyback ride to accompany them probably won’t hurt either)
