This morning was one of those morning that made me yearn for fall weather. Do you ever wake up and imagine that the air is nippy, and you almost have yourself convinced until you open the front door and struggle for a breath because the 95 degree humidity slaps you right back into reality? I know I do. But this morning I didn’t open the door, I just let myself pretend that it was chilly outside and I sprayed a little cinnamon pumpkin scent in the kitchen to add to the ambiance while I cooked breakfast. Breakfast reminds me of fall as well. I guess it’s because one of the biggest breakfasts that I cook is on opening morning of duck season, which falls in mid-September, right as the early morning chill begins to visit Louisiana. I love breakfast! It is definitely one of my favorite meals, especially when I get to share it with someone else. Big family breakfasts are just peachy in my opinion and I live for holidays whenever they are made possible. This morning Benjamin cleared his schedule to spend a little quality time with his sweetie pies so I pampered him with some pancakes. Hattie pampered him with some patty cakes, which do you think he liked better?
Hattie has always been so great about playing by herself for a short while and it has ultimately fed her independent spirit. She has lately taken up the habit of following me around and playing at my side, still independently, but within eyesight of me. It’s adorable in my opinion. When I’m cooking, I usually give her the reigns with plastic kitchen items and she bakes up a storm. She will be making gourmet meals at 3 years old, or quizzing the lunch ladies at her school on how many cups of flour they used in their rolls, if it was self rising, and whether they sifted it or not. I can’t wait.
I have always made pancakes from a box. I’m not sure why? I guess I watched my mom cook them this way and so I naturally followed in her steps. This morning the imaginary fall nip gave me a perkiness that made me want to try some pancakes from scratch, and boy did they kick my boxed mix’s booty! I found this recipe and decided to make it my own.
Here are the ingredients:
-1 1/2 cups of all purpose flour
-3 1/2 teaspoons of baking powder
-1 teaspoon of salt
-1 tablespoon of sugar
-1 1/4 cups of milk
– 1 egg
– 3 tablespoons of melted butter
– and I added 1 tablespoon of vanilla just for fun
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Ben added chocolate chips to his pancakes,and the vanilla that I added was the icing on the cake (if you like that sort of thing…) This made enough pancakes for Ben, Hattie, and I, plus we had 1 left over if that helps you gauge how much you would need to make to feed your crew.
Try them out. They might just make you imagine that it’s autumn already!
